  The fruit of the olive trees grown in Ayvalık and Edremit region. Can be consumed in both black and green form. İts high oil content gives a special taste. Due to special color of its own,the olives change their color to dark brown when processed as black table olive. Because of the same reason, the olives chance their color to various shades of pink and brown when processed as green table olive by scratching with a sharp knife.

With its big and pure green color, it is consumed as green table olive, Due to its fleshy nature and big olive size, this type is very suitable for processing of pitted, sliced and stuffed( with red pepper almond, garlic etc.) green olives. As well prepared green table olive, it is very tasty, nutritious and natural.
